Echo, the Italian restaurant of Cinnamon Grand welcomed Dell Ascenza Riccardo as its new chef. With a wealth of experience spanning 30 years, Riccardo has previously been employed in a number of locales including Italy, Russia, England, Egypt, Germany, Ukraine and Australia. Having been attached to the Mar-theme, Movenpick and Jarvis hotel chains as well many authentic Italian restaurants in Sicily and Rome, this is Riccardo’s maiden venture in Asia.
The new chef’s vision for Echo includes the introduction of truly traditional tastes to the menu, while putting his heart and soul into the creations that come out of the Echo kitchen.
In fact, ‘passion’ he says, is a vital ingredient for Italian cuisine. Riccardo with his passion in the kitchen and Echo’s selection of authentic Italian herbs, spices and truffles is excited to impart the art of the Italian gastronomic culture to Sri Lanka.
